Last week I decided to use my crockpot to cook our suppers for 5 out of 6 nights. It was wonderful to not have to think about what I was fixing for supper when 5 o’clock rolled around.
Over the next few weeks I will be sharing the recipes I concocted. Today I am sharing a very simple recipe for pork chops with gravy. It was very easy and delicious when served with mashed potatoes and other fruits and veggies.
Crockpot Pork Chops with Gravy
Ingredients
- Pork Chops
- 3-4 Cloves Garlic, Minced
- 1 Tbsp. Oil
- ¾ Cup Apple Juice
- Salt
- Pepper
- 1-2 Tbsp. Cornstarch
- 1-2 Tbsp. Cold Water
Instructions
- Heat oil in a skillet.
- Lightly brown pork chops on both sides.
- Transfer pork chops to crock pot.
- Season with salt & pepper.
- Add the minced garlic to the skillet.
- Brown garlic lightly, 3-4 minutes.
- Add the apple juice and bring to a boil.
- Pour the apple juice/garlic mixture over the pork chops.
- Cook pork chops in crockpot on low for 8+ hours.
- Just before serving, remove the pork chops from the crockpot and strain the liquid through a sieve.
- Pour the liquid into a small pan and bring to a boil over medium heat.
- In a separate bowl mix the cornstarch with the cold water.
- Whisk the cornstarch mixture into the boiling liquid and cook until thick.
- Serve the gravy over the pork chops and/or mashed potatoes.
Notes
I made this recipe with several pounds of boneless, skinless pork chops, but it should work with bone in chops as well.
If 1 tablespoon of cornstarch and water doesn't make the gravy thick enough try it again with another tablespoon of cornstarch and water. Just be sure to use cold water and to mix the cornstarch with the water before adding it to the boiling liquid or you will get lumps in the gravy.
Water could be substituted for the apple juice.
This recipe is gluten-free.
