We have hit the time of year where the garden no longer looks pretty due to the heat, weeds, and the fact that many of the plants are finished producing. However, there are still many good things about my garden despite its looks.
Like the fact that I harvested almost a bushel of tomatoes yesterday. These will get juiced and turned into spaghetti sauce that I will can for later.
A few days ago I harvested a dozen butternut squash. I decided to freeze them this year instead of storing them in my basement like I normally do.
In order to freeze the butternut squash, I cut off each end, peeled the squash, and scooped out the seeds. Then I cut the squash into pieces and froze it on cookie sheets for a few hours.
I ended up with a full 2 1/2 gallon bag of butternut squash that can used for butternut squash soup, butternut squash casserole, or some other tasty dish.
I pulled up our pumpkin plant and a cucumber plant last week. I only ended up with 3 pumpkins and they were rotten inside. 🙁
The good news from this garden spot is that, in addition to the butternut squash I harvested, I was able to dig up 8 pounds of potatoes a few days ago.
We have eaten a few and they were quite yummy. I am hoping to get at least twice this many potatoes when I harvest the rest.
That’s a look at how our garden is growing this week. Now, I am off to go juice all of those tomatoes I picked yesterday. How is your garden growing?
