Fruit and Cereal Bars Recipe

Fruit & Cereal Bars

I have been making these yummy fruit and cereal bars for a couple of years now and we really enjoy them. They are yummy enough to make us feel like we are eating a dessert, yet they are healthy enough that I don’t feel bad about letting my kids eat them. Plus, they are a great way to use up some of my homemade jellies and jams.

Fruit & Cereal Bars

Ingredients
  • ½ Cup Butter
  • ½ Cup Coconut Oil
  • 2 Cups Whole Wheat Flour
  • 1½ Cups Oats
  • 1 Cup Brown Sugar
  • 1 tsp. Vanilla
  • 1+ Cups Jelly or Jam
Instructions
  1. Melt butter and coconut on the stove or in the microwave.
  2. Stir in vanilla and sugar.
  3. Mix in flour and oats.
  4. Press half of the mixture into a greased pan.
  5. Spread with jelly or jam to cover the entire surface of the mixture.
  6. Sprinkle remaining flour mixture over the top and press gently.
  7. Bake at 350 degrees for 20-25 minutes.
  8. Cool and cut into bars.
Notes
The coconut oil can be replaced with butter, and the brown sugar can be replaced with a more natural sugar, if desired. Regular flour could also be used instead of whole wheat.

The size of the pan used will determine the thickness of the cereal bars. A 9x13 pan will yield a much thinner bar than a smaller pan. If using a 9x13 pan, put more than ½ of the mixture on the bottom to cover it completely.

    I’d like to try and make these gluten free. Anyone have experience with that? Just looking at the recipe I’m thinking I could use my flour mix (millet, sorghum, potato starch and tapioca starch) as an even substitute. Do you think I’d need to use xanthan gum with it?

      Hi, Cheryl. I haven’t made them gluten-free yet, but I think that using your flour would be fine. I am not sure that adding the xanthan gum would be necessary, but you could try 1/4 teaspoon maybe. My son also has a dairy allergy so I haven’t made these for him, but I am thinking of trying it with coconut oil and gluten-free flour. Let me know how they turn out for you. 🙂
