When I went grocery shopping on Friday I purchased a bunch of kale. My husband and I have tried eating it in salads before, but have found the taste to be slightly bitter. We know there are many health benefits (contains Vitamin K, C, A, and even calcium) that come from eating kale, but we have had a hard time fitting it into our diet, until now.
Between my husband, Julia and I we devoured half of these kale chips on Friday evening. I guess you could say we liked them. :-)
Kale chips aren’t going to be as crunchy as potato chips, but they are a healthy way to satisfy a junk food craving. Here’s how you can make your own.
You will need one bunch of kale.
I washed and dried the kale. Here is where a salad spinner might come in handy. I just let mine dry on a towel.
Then, I tore the kale into pieces and discard the large stems.
Side note: Joseph weighed our bunch at the grocery store and found that we almost had one pound of kale. It was a real-life lesson in weights and measures as well as numbers. He weighed all of our produce and thought it was great fun.
In a large bowl, I mixed 2 tablespoons of extra virgin olive oil and 1 teaspoon of sea salt. I added the kale and tossed it around to coat it with the oil and salt.
Next, I spread the kale out on two large baking sheets. I actually did mine in two batches so I only used one baking sheet. I was testing two different temperatures to see which worked better.
Then I bake the kale in a 300 degree oven for 25 minutes. I let the kale cool slightly before removing from the baking sheet.
You can eat the kale chips as is or do something we tried.
We put about half of our kale chips into the food processor and chopped them up finely until they looked like parsley.
They were a yummy addition to a bowl of potato soup (Added after the soup was dished out.).
We even sprinkled them on some popcorn. My husband loved it!

- Add kale pieces and toss to coat.
- Spread kale in a single layer onto 2 baking sheets.
- Bake in a 300 degree oven for 25 minutes.
