Several years ago I posted my great-great-aunt’s recipe for apple goodie. It is a very yummy apple crisp type of dessert. Since I had several zucchini I wondered if I could use the same recipe and get a similar result.
I made just a couple of changes and the result was an ooey-gooey dessert. Yum!
Zucchini (or Apple) Goodie
Ingredients
- 5 Cups Chopped Zucchini or Apples
- 1 Tbsp. Lemmon Juice (for Zucchini only)
- 1 c. Sugar
- 1 tsp. Vanilla
- 1 tsp. Cinnamon
- 1 c. Quick Oats
- 1 c. Flour
- 1 c. Brown Sugar
- ¼ tsp. Baking Soda
- ¼ tsp. Baking Powder
- ½ c. Shortening or Lard
Instructions
- Preheat oven to 350 degrees.
- Peel, chop, and remove the seeds from zucchini (or apples).
- Add lemon juice to the zucchini.
- Stir in sugar, vanilla, and cinnamon.
- Pour mixture into a greased 9 x 13 pan.
- In a bowl combine oats, flour, brown sugar, baking soda, and baking powder.
- Using a fork or pastry blender, mix the shortening or lard in with the oat mixture until it is crumbly.
- Pour the mixture over the apples in the pan.
- Bake in a 350 degree oven for 30 minutes.
Notes
I prefer to use lard or a natural shortening. I have not tested this recipe with butter.

I like to eat this dessert while it is warm. It is really good with ice cream, too. I do recommend keeping leftovers in the refrigerator.
