Sweet Potato Casserole

We were blessed in the fall when some friends shared some of their harvest with us. They gave us quite a few sweet potatoes, so I asked my mom for her recipe for sweet potato casserole. The recipe originally came from a lady at church who passed on a few years ago. I will remember her each time I make this tasty dish.

Sweet Potato Casserole

3 Cups Mashed Sweet Potatoes
1 tsp. Vanilla
½ Cup Sugar
2 Eggs
1/3 Cup Melted Butter

Topping:
1 Cup Brown Sugar
1/3 Cup Melted Butter
1 Cup Pecans
1/3 Cup Flour
1 Cup Coconut

Mix the first 5 ingredients. Pour into bottom of a greased 9”x13” casserole dish. Mix topping ingredients. Crumble over top of sweet potato mixture. Bake at 350 degrees for 20 to 25 minutes.

    We eat a lot of sweet potato, or kumera as we call them in NZ, but I have never seen a recipe like this and can’t wait to give it a try. It looks a little sweet so am sure Miss 7 will love it. Also just wondering what colour are your kumera’s? We have 3 varieties (red/gold/white) Thank you.

      That is interesting, Lisa. I have never heard them called “kumera”. I am not sure what the variety we have is called. The inside is orange, so maybe they are like your gold variety.? I’m not sure. This is a sweet dish, but so yummy. 🙂
