Since the weather has turned cooler we have instituted soup, sandwich and smoothie night. We have several soup and sandwich combinations that we enjoy.
Last week we enjoyed some potato soup, a green smoothie, and ham and cheese sandwiches with a twist. Here are the recipes for the soup and sandwich. They sure hit the spot on a cold night.
Potato Soup
Potatoes (Peeled & Cubed)
—Amount will vary, but 6 large potatoes is a good amount.
Cover potatoes with water in a stock pot. Boil until tender. Drain most of the water.
3-4 Tbsp. Butter
3-4 Tbsp. Flour
In a sauce pan melt butter over low heat. Add flour and stir until bubbly. Remove from heat.
2-3 c. Milk
1 tsp.Salt
¼ tsp. Pepper
½ tsp. Garlic Powder
Use a whisk to add the seasonings and milk to the flour/butter mixture. Pour over the potatoes. Bring just to a boil. Add more milk and seasonings to get desired consistency and taste.
We like to add bacon bits and shredded cheese to each bowl of soup. This recipe came from my mom.
Ham & Cheese Sandwiches
1 Package of Hawaiian Sweet Rolls
Sliced Ham
Sliced Cheese (I used muenster.)
Cut rolls in half. Put ham and cheese on bottom half and put the top back on. Place in a 9″ x 13″ baking dish.
In a small saucepan combine over low heat until butter is melted:
1/3 Cup Butter
1 Tbsp. Minced Onion
1/2 tsp. Worcestershire Sauce
1 Tbsp. Honey Mustard*
Pour the mixture over the rolls and place into a 325 degree oven for 15-20 minutes.
*I didn’t have any honey mustard, so I made my own. Combine 3 Tbsp. Mayonnaise, 1 Tbsp. Honey, and 1 1/2 tsp. Yellow Mustard. It was more than needed for this recipe.
This recipe came from my aunt who made us these when we visited this summer. Her recipe called for much more butter and more minced onion. We thought it was a little too much, so I reduced it down. Of course, you could always add more if desired.
