Smoked Sausage & Potato Bake

My family loves fried potatoes. I don’t make them often, but when I do there are never any leftovers.

I usually pair fried potatoes with smoked sausage. Well, last week I decided that I wanted to try putting everything together into a casserole dish and bake it instead of standing over a frying pan.

I am happy to report that my experiment was a success and, while my family would still prefer fried potatoes, the potatoes in this casserole were a very close second.

As an added bonus, this meal is free of gluten and dairy.

Smoked Sausage & Potato Bake

Ingredients
  • 8-10 Potatoes
  • 1-2 Tbsp. Extra Virgin Olive Oil
  • Salt
  • Pepper
  • 1 Onion
  • 1 Green Pepper (optional)
  • 2 Packages Smoked Sausage
  • ¼ Cup Water
Instructions
  1. Peel, rinse, and slice the potatoes.
  2. Put the extra virgin olive oil into a 9x13 casserole dish.
  3. Add the potatoes and stir to coat with the oil.
  4. Sprinkle the potatoes with salt and pepper.
  5. Slice the onion, green pepper, and smoked sausage.
  6. Add the onion, green pepper, and sausage slices to the casserole dish.
  7. Stir gently to mix the ingredients.
  8. Add the water.
  9. Cover the casserole dish with a glass lid or foil.
  10. Bake in a preheated 375 degree oven for 50-60 minutes, or until potatoes are tender.
Notes
This casserole can be allergy-free if you purchase smoked sausage that is labeled gluten and dairy free.

This casserole makes enough to feed a large family. If you don't need as much then you can use fewer potatoes and only 1 package of sausage. Recently, because my family has bigger appetites, I have been using 12 potatoes and 3 packages of smoked sausage.

A large baking sheet makes a great lid for a casserole dish and is a reusable alternative to foil.

I have recently found a simple way to quickly slice potatoes for this recipe. I purchased a mandoline slicer (affiliate link) and it has really been a time-saver.
