I am trying to do a better job of using more “real” foods. While I know that real butter is better for us, I was still using margarine because it is spreadable. Gasp!
Well, I’m not using margarine anymore. I have started making my own soft butter spread. It is quite easy.
I had looked at several sites and found most had similar recipes for spreadable butter. However, I liked Tammy’s Recipes version the best. I doubled her recipe and it lasted us two weeks. We are now on our second batch and we all like it.
Soft Butter Spread
1 pound (4 sticks) Real Butter (softened)
1 Cup Extra Virgin Olive Oil (The original recipe called for canola oil.)
1 1/4 Cup Water
I use my whisk attachment for my mixer and mix the sticks of butter for a minute or two. Then I gradually add the oil. Finally, slowly add the water and mix until all of the ingredients are mixed and are “fluffy”. Place the butter into a lidded container and store in the refrigerator until ready to use.
Our menu plan this week will be a little different from normal. We will be eating with our extended family three nights and at a party one night.

Monday - Macaroni & Cheese with Hamburger, Salad, Smoothies
Tuesday - Eat with family.
Wednesday - Eat with family.
Thursday - Eat with family.
Friday - Tacos/Taco Salad, Refried Beans, Smoothies
Saturday - Eat at a party. I will take a couple of side dishes.
