Pineapple Dew Cake
1 ½ Cups Sugar
2 Eggs
2 Cups Flour
1 tsp. Baking Soda
½ tsp. Salt
1 Can Crushed Pineapple with Juice
½ Cup Brown Sugar
½ to 1 Cup Chopped Nuts
Preheat oven to 350 degrees. Mix sugar, eggs, flour, baking soda, salt, and pineapple. Pour into a greased and floured 9×13 inch pan. Sprinkle the brown sugar and nuts on top. Bake for 45 minutes to 1 hour (toothpick inserted in the center should come out clean).
Topping:
1 ½ Sticks of Butter
1 tsp. Vanilla
1 Cup Sugar
1 Can Evaporated Milk
Mix ingredients in a sauce pan. Bring to a boil and continue boiling for 10 minutes (stirring frequently). Once cake is finished poke holes in it while hot, and pour the topping over it.
I have made this recipe without the nuts (like in the picture) and it is still good. I would have put nuts on the cake, but when I went to the store I looked right at the nuts, but didn’t buy them because they weren’t on my list. 🙂
This recipe was given to me by a co-worker when I was in college.
