I have shared before that our family loves pork loin and pork chops. Whenever we have leftovers of either one I like to use the meat to make sweet & sour pork.
I serve the sweet and sour pork over cooked rice and usually serve it with a vegetable like brussels sprouts and fruit. If you would like to see how I make this recipe, check out the link below. This is definitely a yummy way to enjoy leftover pork.
Sweet & Sour Pork Ingredients - 2 Tbsp. Extra Virgin Olive Oil
- 3 or 4 Cooked Pork Chops
- ½ of a Green Pepper, chopped
- ½ of a Onion, chopped
- 3 Tbsp. Sugar
- 3 Tbsp. Vinegar
- 2 Tbsp. Soy Sauce
- ¼ tsp. Ginger
- ¼ tsp. Garlic Powder
- 1 cup Crushed Pineapple, drained
- Reserved Pineapple Juice
- 1 Tbsp. Cornstarch
Instructions - Cut the cooked pork chops into bite sized pieces (Trim away the fat and bones if necessary).
- Heat the oil in a skillet over medium high heat.
- Add the chopped onion and green pepper and sauté until tender (approx. 5 mins.).
- Add the pork and sugar.
- Stir to combine.
- In a measuring cup, add reserved pineapple juice and enough water to equal ¾ cup.
- Use a whisk to combine this with the vinegar, soy sauce, cornstarch, ginger, and garlic powder.
- Pour this liquid into the skillet after you add the sugar.
- Stir and bring to a boil.
- Boil for 1 minute.
- Remove from heat and add the pineapple.
- Serve over cooked rice.
