I have been making lemon garlic chicken since last summer and my family really enjoys it. I wasn’t sure that the basil on top of the chicken would be appealing to my pickiest eater, but he loves it. The great thing is that it is safe for Joshua who has food allergies.
When I can figure out how to make something that everyone likes you can bet it will be a meal I make fairly frequently. I make this recipe about once a month. To save time for a future meal, I will make up two batches of the recipe. I cook one batch that day and freeze the other uncooked.
I like to serve the lemon garlic chicken with a baked potato, a vegetable (turnip greens pictured) and fruit. This is a simple, but yummy meal that gets rave reviews around here.
