I harvested about 25 onions from my garden this year. None of them were very big, so I decided to chop them up and freeze them.
I started by removing the outer skin. Then I quartered the onions and chopped them in my food processor. This process literally brought me to tears. 🙂
I put the minced onions onto a plastic wrap lined cookie sheet and stuck it into the freezer. I could have also put them into ice cube trays to freeze them.
When the onions were frozen I broke the frozen onions into pieces and put them into a gallon freezer bag.
Because I chopped up all of the onions at once, adding minced onions to my recipes will be a breeze. Have you ever frozen onions?
