Last week I picked 5 heads of cabbage from our garden. I gave one to my mom and decided to freeze the rest.
If you have ever wondered how to freeze cabbage for use later in soups or other recipes then I have just the tutorial for you.
The first thing I do is pull off some of the outer leaves because they usually have dirt on them and some holes from those pesky cabbage moths that like to nibble on them.
Then I wash the cabbage to get off any remaining dirt.
The next thing I do is cut the cabbage into quarters or sixths depending on the size of the cabbage. My cabbage was huge so I cut the heads into sixths.
Be sure to leave the core intact so that the cabbage will stay together.
While you are cutting the cabbage boil water in a large pot.
Once the water is boiling place one or two wedges of cabbage into the pot.
Blanch the cabbage for 3 minutes and then remove it from the pot.
Place the cabbage on wire racks to drain and cool for an hour or two. I recommend placing a towel under the racks.
Once the cabbage is pretty dry wrap each wedge with plastic wrap and then place into freezer bags.
The purpose of individually wrapping each wedge of cabbage is two-fold. First, it will help protect against freezer burn. Second, the plastic wrap will keep the wedges from sticking together.
It really is simple to freeze cabbage using this method. I love adding cabbage to vegetable soup and by freezing the cabbage I grew in my garden I won’t have to pay high prices for cabbage in the winter.
