My kids love chicken nuggets. However, I don’t love buying them at fast food restaurants or even the frozen kind at the grocery store. For one, there are too many ingredients and some I can barely pronounce. Not only that, they can be expensive compared to other meals I make from scratch.
For example, we once bought my son with food allergies a kind of chicken nugget that was safe for him. One box cost nearly $7, and the nuggets were really tiny. I tried to get two meals (for Joshua only) out of the box, but he didn’t even like them that well.
So, I decided to make some myself. My kids loved them. Plus, there were enough to feed our whole family for less than that box I bought for just my son.
Not only were the nuggets more frugal to make myself, but I knew exactly what was in them. I have made these gluten-free chicken nuggets several times during the past couple of months and I typically serve them with veggies and fruit.
While I made the nuggets safe for my son with allergies, you could easily use regular flour if you don’t have to deal with food allergies. I baked the nuggets, but they could be fried if you prefer.
Because my family is large, I always double this recipe. To make these chicken nuggets I recommend having parchment paper and a meat tenderizer on hand.

- 2 Chicken Breasts
- 1 Cup Gluten-Free Flour
- ½ teaspoon Salt
- ⅛ teaspoon Pepper
- 2 Tablespoons Extra Virgin Olive Oil
- Parchment Paper Lined Baking Sheet
- 2 Bowls
- Knife or Kitchen Shears
- Remove bones and skin from chicken breast if using a bone-in breast.
- Use a meat tenderizer on each breast.
- Cut the chicken into bite sized pieces.
- Combine the flour, salt and pepper in a bowl.
- Place the chicken nuggets into the flour mixture and coat well.
- Pour the olive oil into a separate bowl.
- Put the flour coated chicken nuggets into the olive oil and toss to coat.
- Spread the chicken nuggets onto the parchment paper lined baking sheet.
- Bake in a 400 degree oven for 20-25 minutes or until cooked through.
This recipe is for baked nuggets. If you will be frying the chicken nuggets, omit the step of dipping the flour coated pieces into the olive oil.
