My garden is really starting to look pretty sad. The only things left are tomatoes, peppers, cabbage, brussels sprouts (I don’t know if they will ever be ready.), and green beans.
I am about ready to pull my green beans because they haven’t produced much at all this summer. I was only able to get 2 gallons worth. Normally, I get several bushels. Still, I am hoping they might produce a little more before the end of the summer.
All that is left in my back garden spot are regular and sweet potatoes. They should be ready before long.
On Monday I canned 15 jars of jelly (See this post for the recipe.), and 6 quarts of tomato sauce. Not a bad start to the canning season, I guess.
Just in case you were curious, I don’t make my tomato sauce the traditional way. What I do is juice the tomatoes and fill my huge roasting pan with the juice. Then I put the pan in the oven and let it cook all day at about 300 degrees. I stir the juice every so often.
Once the juice has turned into a thicker sauce I process jars of sauce in my water bath canner (40 minutes for quarts). It really is an easy method.
I use the sauce for spaghetti by adding a few ingredients when I heat it up. I will can some juice for use in soups, and I hope to make some salsa to can as well.
