Baked Apple Slices Recipe & Weekly Menu Plan

After several months of not writing out a weekly menu plan I am back on the wagon so to speak. I wrote out my meal plan last night and am happy to say that almost everything on my menu is coming from my freezer and pantry.

We have been blessed by the awesome gift of deer meat, so our freezer is full of that. Plus, whenever we find a good deal on meats or frozen vegetables we stock up. This is why I will only need a few things from the store this week.

I also am trying to organize a home management binder and worked to create a master list of main dishes we like to eat. This should help me be better organized when it comes to planning my weekly menu. I also looked at the calendar section of my notebook and realized that I won’t have to cook a whole meal on Friday night because we are having supper at church.

Do you plan out your menus by the week, by the month, or are you more of a day by day planner? I would love to hear what works for you.

After I share my menu plan I will be sharing a recipe I experimented with for baked apple slices. Yummy!

Menu Plan
  • Sunday - Potato Soup, Fruit Smoothies
  • Monday - Baked Pork Chops, Baked Sweet Potatoes, Peas, Fruit Smoothies
  • Tuesday - Fish Fillets, Macaroni & Cheese, Cooked Carrots, Baked Apple Slices
  • Wednesday - Baked Turkey Breast, Butternut Squash, Cooked Broccoli, Fruit Smoothies
  • Thursday - Sweet & Sour Pork, Rice, Cooked Cauliflower, Applesauce
  • Friday - Family Night at Church (I will probably make a dessert and take some fruit, too.)
  • Saturday - Turkey Manhattans, Green Beans, Fruit Smoothies

Baked Apple Slices

5 apples
1/4 Cup Brown Sugar*
2/3 Cup Warm Water
1/8 tsp. Ground Nutmeg
1/2 tsp. Cinnamon
1/2 tsp. Vanilla

Peel and slice the apples.  Place in a baking dish that has a lid.  In a separate bowl, combine the water, sugar, nutmeg, cinnamon and vanilla.  Pour the mixture over the apples and stir.  Put the lid on the pan and bake in a 350 degree oven for 35-40 minutes or until apples are tender. 

*I like to use natural sugars, so evaporated cane juice or turbinado would be good substitutes for the brown sugar.
