I am looking forward to trying out the gluten-free rice flour blend when it becomes available. It would be much easier to use a pre-made blend than making my own, especially for times when I want to make a quick dessert. (Like for the recipe at the end of this post.)

- 1 ½ Cups Brown Sugar
- ½ Cup Earth Balance Dairy & Soy-Free Butter
- 2 Tbsp. Ground Flax Seed
- 6 Tbsp. Warm Water
- 1 tsp. Vanilla
- 1 ½ Cups Gluten-Free Flour Blend
- ½ tsp. Baking Powder
- ½ tsp. Salt
- 1 tsp. Xanthan Gum
- ½ Cup Enjoy Life Mini Chocolate Chips
- Preheat oven to 350 degrees.
- Melt the butter.
- Mix the ground flax seed and warm water in a separate bowl.
- Combine the brown sugar, melted butter, flax and water mixture, and vanilla just until blended. Combine gluten-free flour, baking powder, salt, and xanthan gum in a separate bowl.
- Add the flour mixture to the brown sugar mixture.
- Stir in chocolate chips.
- Spread into a greased 9”x13” pan.
- Bake at 350 degrees for 18-20 minutes or until a toothpick inserted near the middle comes out clean.
- Cool on a wire rack.
- Cut into bars.
You can grind flax seed in a blender and then store in the refrigerator.
The flax seed and water are a replacement for 2 eggs which can be used if egg allergy isn't an issue.
Regular butter can also be used if a dairy allergy isn't an issue either.
