When Joshua was diagnosed with multiple food allergies over four years ago it was very hard to figure out what to feed him. Many of the recipes I tried flopped.
Over the years I have figured out what works and what doesn’t, for the most part.
One of my entire family’s favorite allergy-free desserts that I have made are oat chocolate chip cookies.
This recipe is free of dairy, eggs, soy, and wheat. However, even if you don’t have allergies to any of those foods you can still enjoy these cookies.
You can substitute regular oats for the gluten-free oats and cow’s milk in place of almond or rice milk. They should still taste great.
I use Enjoy Life Chocolate Chips in this recipe, and many others, because they are safe for those with allergies and they are delicious.
Ingredients
- 2 Cups Gluten Free Oat Flour
- 1/2 tsp. Baking Soda
- 1/4 tsp. Salt
- 3/4 Cup Evaporated Cane Juice*
- 1 Tbsp. Ground Flax Seed**
- 1/4 Cup Enjoy Life Chocolate Chips
- 1/3 Cup Extra Virgin Olive Oil
- 1 tsp. Vanilla
- 1/4 Cup Almond or Rice Milk
Instructions
- To make oat flour: Grind gluten-free oats in a blender until it turns into a coarse "flour".
- In a mixing bowl, combine oat flour, baking soda, salt, evaporated cane juice, ground flax seed.
- In a separate bowl, combine oil, milk and vanilla.
- Pour liquid mixture into the bowl with dry ingredients and mix well.
- Stir in the chocolate chips.
- Drop spoonfuls of dough onto a parchment paper lined cookie sheet.
- Bake for 10-12 minutes in a 375 degree preheated oven.
- Remove from oven and cool for 5 minutes before transferring to a cooling rack.
Notes
*If you don't have evaporated cane juice you can use another type of natural sugar. If you would prefer to use regular sugar substitute 1/4 cup brown sugar and 1/2 cup white sugar in place of the evaporated cane juice.
**You can purchase ground flax, but you can also make your own by grinding flax seed in a blender like you will to make the oat flour. I prefer to use golden flax seed.
Be sure to use parchment paper!
Time Saving Idea: Mix all of the dry ingredients together, including the chocolate chips, in a freezer bag and store them in the freezer or refrigerator until you are ready to mix up a batch. Then simply add the vanilla and milk and bake as per the instructions.
