Crockpot Chili Recipe

When I was growing up my mom made chili soup with noodles and beans. It wasn’t spicy, but it was very good.

When I met my husband he told me that his dad made a spicy chili with no beans or noodles. What? No beans and no noodles?

Yes, apparently I lived under a rock not to know that there were other ways to make chili. :)

The first time I tried my father-in-law’s chili I was sold. While I have made his recipe before, it is a little too spicy for my kids.

So, I started concocting my own chili recipe. What I came up with is not only tasty, but it is super easy because I let my crockpot do most of the work.

Crockpot Chili

Ingredients

  • 2 lbs. Ground Beef (or 1 lb. beef & 1 lb. sausage)
  • 1 Onion
  • 3 Quarts Tomato Juice
  • 2-4 Jalepeno Peppers
  • 2 Celery Stalks
  • 1/4 Cup Chili Powder
  • 1/4 Cup Honey

Instructions

  1. Brown the ground beef and sausage (if using) in a skillet.
  2. Chop the onion, peppers, and celery.
  3. Add the onion, peppers, and celery to the skillet with the meat.
  4. When meat is thoroughly cooked, drain the grease.
  5. Place the meat, onion, peppers, celery, chili powder, honey, and tomato juice in a crockpot.
  6. Give everything a stir.
  7. Put the lid on the crockpot.
  8. Turn the crockpot on low and cook for at least 8 hours.

Notes

I often brown up large quantities of beef and sausage and keep them in the freezer in 1 pound portions. When I do this I simply put all of the ingredients in my crockpot without sautéing the vegetables. The chili still tastes great this way and is even easier.

Just remember, the more jalepeno peppers you put in the chili, the spicier it will be.

    Your mom and my mom must have had the same recipe. I make a vegetable chili now and at times put meat in it. My family doesn’t like noodles in chili, but I put it in every once in a while for me.
