{Make-Ahead Thanksgiving} Mashed Potatoes

Today I made another dish for Thanksgiving, make-ahead mashed potatoes. Actually, I made two batches because we are going to have quite a crowd and I don’t want to run out.

The recipe I used is from my mom and they are quite tasty. I would caution against making a double batch and putting it in one large pan. The year I did that the mashed potatoes overflowed and my oven was a mess.

Instead, I recommend making two separate batches and putting them into separate 9×13 casserole dishes. Trust me, you don’t want to deal with burnt mashed potatoes in your oven or your house smelling like burnt mashed potatoes. :)

The ingredients you will need to make make-ahead mashed potatoes are potatoes, salt, minced onions, butter, sour cream, and cream cheese.

The first thing you will do is peel, cube, and boil the potatoes. Pretty standard process for mashed potatoes, right?

When the potatoes are tender you need to drain and mash them. Then you just mix in all the other ingredients, put them into a greased pan, and spread melted butter over the top.

The potatoes can either be placed in the refrigerator for a day or two, or you can freeze them.

I covered the pans with foil because the potatoes need to be covered for the first 40 minutes. Then, I put the lid on my casserole dish and added a label.

Make-Ahead Mashed Potatoes

Ingredients

  • 10 Large Potatoes
  • 1 Cup (8 oz.) Sour Cream
  • 1 Package (8 oz.) Cream Cheese
  • 4 Tbsp. Butter plus 2 additional Tbsp. Melted Butter
  • 2 Tbsp. Dried Minced Onion
  • 1 tsp. Salt

Instructions

  1. Peel and cube the potatoes.
  2. Place the potatoes in a large pot and cover with water.
  3. Cook potatoes for 20-25 minutes or until tender.
  4. Drain and place in a mixing bowl.
  5. Mash potatoes.
  6. Add sour cream, cream cheese, butter, onion and salt.
  7. Beat until smooth.
  8. Spread into a greased 9″ x 13″ baking dish.
  9. Melt 2 Tbsp. butter and drizzle over potatoes.
  10. Either refrigerate or freeze the potatoes for later or bake now.
  11. Bake at 350 degrees for 40 minutes covered.
  12. Remove cover and bake 20 more minutes.

Notes

Dethaw the mashed potatoes in the refrigerator prior to baking if they were frozen.

    I honestly don’t know why I have never thought to make most of the Thanksgiving dinner ahead of time like this. This is getting me all inspired to do the same, especially with so many dishes to prepare if you are the hostess. I will try to prepare this year ahead of time so I can enjoy my family more also. I always feel so drained on that day and we have church that same night so this will help to make it a relaxing day and not so tiring, THANK YOU!

      Thanks so much, Linda! I am all about making life easier and more enjoyable on the day of a big event. If I host a big crowd I always try to do my cooking ahead of time. So much nicer.

    I too love this idea! This year I will be sharing Thanksgiving cooking duties with my two sisters-in-law (we are making dinner for my in-laws) and I think I need to try some of your ideas. My only issue is that I have to transport food and then heat it up at their house, and they have limited kitchen space. Do you have any suggestions on what I can do to make it easier? Thanks :)

      Thanks, Sandy! Well, if they have limited kitchen space then I definitely think making the food ahead of time and just heating it at their house would be the way to go. If you can put the foods in casserole dishes and then put them in boxes surrounded by towels that might help with the transportation if that is your issue. I am not sure what you need to fix, but if you let me know maybe we can brainstorm a way to make it easier. :)

    We make these for St. Patricks day except we put lots of Garlic and minced Chives in as well. They are super yummy either way!! I have also put them in my crockpot crock and placed them in the refrigerator a day or two (no foil). Just put it in the cooker and turn them on low for 3-4 hrs.

      I think the addition of garlic and chives would be super yummy. The crockpot is a great idea! I may have to try that sometime when I don’t need my crockpot for other things like I will on Thanksgiving. Thanks for sharing. :)
