Lemon Garlic Chicken Recipe

A couple of months ago I tried a new chicken recipe that everyone in my family likes. Even my son with allergies loves it, and he can be hard to please when it comes to trying new foods. He doesn’t even mind the “green things” on top.

The very simple marinade uses only three ingredients which makes it super easy. I have used this recipe in the skillet and in the oven. I imagine it would be good for grilling as well.

I made up several packages of chicken and froze them. When I was ready to cook them I put them into the refrigerator to dethaw overnight. This has been a real timesaver as I have been trying to make multiple batches of the same recipe to have meals in the freezer for busy days.

This recipe is easy and tasty. I totally recommend giving it a try.

Lemon Garlic Chicken

Ingredients

  • 1/3 Cup Lemon Juice
  • 1 Tbsp. Dried Basil
  • 3 Cloves Garlic (Minced)
  • 4 Boneless, Skinless Chicken Breasts
  • 2 Tbsp. Oil (If cooking in a skillet.)

Instructions

  1. Mix the lemon juice, basil and minced garlic cloves in a bowl.
  2. Pour the mixture over the chicken breasts and let marinade in a dish at least 1/2 an hour.
  3. Skillet Method: Heat oil in skillet over medium heat.
  4. Add chicken and lemon juice mixture.
  5. Cook chicken on each side.
  6. Chicken is finished when it is no longer pink inside.
  7. Oven Method: Bake chicken in a baking dish at 350 degrees until cooked through.

    I am definitely going to try this recipe. When I clicked on the “Print” button, nothing happened. So I just copied it over to Word and printed it from there.

    Jackie, I made this for dinner last night along with a corn/black bean salad and it was delicious. My hubby does not like the thicker chicken breasts, so I just used chicken breast tenders instead. I made it up in the morning, threw it all in a big plastic storage bag as you show in the picture, and I let it marinate in the fridge all day. Hubby says it is definitely a keeper recipe! Thanks again for sharing it.
