I am calling this dish Italian Zucchini. It was very easy to make.
Peel and slice 1 medium zucchini.
Place in a lightly greased 9 x 13 pan.
Spoon tomato sauce or spaghetti sauce over the top.
Add shredded cheese over the sauce.
Bake in a 350 degree oven for 20-25 minutes.
This next recipe is a variation on fried zucchini that I am calling Parmesan Zucchini.
Peel and slice 1 medium zucchini.
In an empty bread wrapper, baggie or bowl combine 1/4 cup Parmesan cheese, 1 tsp. Italian seasoning, and 1 tsp. garlic powder.
Dip the sliced zucchini in the cheese mixture.
Place in a greased 9 x 13 pan and bake in a 350 degree oven for 20-25 minutes.
I tried to make these in my fryer (see picture below) by dipping the sliced zucchini in a beaten egg first. They were good, but here is a little tip. If you forget to clean out your fryer and then try to make French fries the next day your fries will be covered with burnt cheese particles. Not good.
