Apple (or Zucchini) Goodie

Ingredients

  • 4 Cups Chopped Apples or 5 Cups Chopped Zucchini
  • 1 Tbsp. Lemon Juice for Zucchini Only
  • 1 Cup Sugar
  • 1 tsp. Vanilla
  • 1 tsp. Cinnamon
  • 1 Cup Quick or Rolled Oats or Gluten-Free Oats
  • 1 Cup Flour or Gluten-Free Flour
  • 1 Cup Brown Sugar
  • 1/4 tsp. Baking Soda
  • 1/4 tsp. Baking Powder
  • 1/2 Cup Shortening

Instructions

  • Preheat oven to 350 degrees.
  • Peel, chop, and remove the seeds from apples (or zucchini).
  • (When Using Zucchini Only) Add lemon juice to the zucchini.
  • Add sugar, vanilla, and cinnamon to the apples (or zucchini).
  • Mix well and pour mixture into a greased baking dish (8x8 or slightly larger).
  • In a separate bowl, combine oats, flour, brown sugar, baking soda, and baking powder.
  • Using a fork or pastry blender, mix the shortening or lard in with the oat mixture until it is crumbly.
  • Spread the mixture over the apples (or zucchini) in the pan.
  • Bake in a 350 degree oven for 30 minutes.

Notes

You can use lard or a natural shortening like palm shortening in place of regular shortening. However, I have not tested this recipe with butter.
Using zucchini gives the recipe a different taste than using apples, but both are yummy.
As noted in the instructions, you can use gluten-free oats and gluten-free flour in this recipe to make it gluten-free.
