Our garden is officially finished. I hate to admit that the last month I really didn’t do much with the garden. I know I have a good excuse, but I hate to see any vegetables go to waste. I canned and froze a lot this summer, and I am thankful for what we were able to preserve.
A week and a half ago I asked my husband to help me find the sweet potatoes. You see, the weeds had totally overgrown that area and I wasn’t sure if there were any potatoes there.
So, my husband got on his trusty tractor and mowed a path. It had rained the night before, so the ground was soft enough to dig up each hill. Check out what we found when we started digging…
…all of these beauties. Well, they weren’t so pretty because they were muddy and had to be hosed off, but that wasn’t a big deal. We now have lots of sweet potatoes that should last us all winter.
The biggest sweet potato weighed in at just under 7 pounds. I think that one potato could make a whole sweet potato casserole all by itself.
We had a great garden year and I am thankful for the blessings that all of the produce has been and will continue to be this winter.
