I am anxious for our cucumbers to be ready so that I can enjoy these cucumber boats, as I like to call them.
I simple peel a cucumber, cut it in half, and scoop out the seeds. Then I fill the two halves with tuna, turkey, or chicken salad. Yummy! They are great if you can’t have gluten or are looking to limit your bread intake.
