Yesterday we were blessed to receive 6 bunches (about 40 bananas) of overripe bananas. Woohoo! Yes, I am excited about mushy bananas.
Someone had given my mom a box full and she shared some with me. So, I decided that I would freeze the bananas for use in smoothies and banana bread.
With 3 of the bunches of bananas I peeled them, cut them in chunks, placed them on a baking sheet, and put them in the freezer for a couple of hours.
After the banana chunks were frozen we put them in two gallon bags. These will be great in smoothies.
With the rest of the bananas I peeled them and put them in my mixer. Using my mixer was a quick and easy way to mash up 21 bananas.
When the bananas were mashed I put them in bags and placed them on a baking sheet in the freezer. Once frozen, they stacked nicely in my freezer without the baking sheet.
Freezing bananas is a great way to preserve overripe bananas when you don’t have the time to do something with them right away.
Since I have all of these bananas in my freezer now, I thought it would be great if you let me know what your favorite banana recipes are so that I can be inspired to use them.
