Simple meals without lots of added ingredients are not only easy to prepare, but they are healthy and are safe for my son with food allergies.
For example, I recently cooked a beef roast in the crock pot with nothing more than salt, pepper, and a little water. It was tender, juicy, and delicious.
The roast had a layer of fat on one side so I placed the meat in my crockpot with the fat side up, sprinkled some salt and pepper on it, and added about 1/2 cup of water. I set the crockpot to low and let the roast cook for a little over 8 hours.
When the roast was finished I removed it from the crockpot and sliced it. I could have made a gravy out of the juices but we decided just to dip our meat in the juice “as-is”. A baked potato, roasted carrots, and a smoothie rounded out the meal. Simple and delicious!
Speaking of roasted vegetables, I cooked the carrots pictured above in another crockpot using the method described on Crockpot 365. While this is an easy method, we have been preferring oven roasted vegetables.
My husband usually likes to have me boil vegetables to make them very tender. However, I was pleased to find that he really liked the way I roasted the vegetables pictured above.
They were leftover from a large veggie tray I had made for a party. I was getting tired of eating them raw so I decided to roast them.
First, I melted about 2 tablespoons of bacon grease (You could use olive oil.). Then I tossed the vegetables in the grease and spread them out on a large baking sheet. I sprinkled a little salt and pepper on top and popped them into a 300 degree oven.
I tossed the vegetables approximately every 20 minutes until they were tender which took about 1 hour. Your time may vary depending on how you like to eat your veggies.
One last thing, did you know you can bake potatoes in the crockpot? I wash the potatoes, rub oil and salt on the skins, poke holes in them, and wrap them in foil. Then I put them in the crockpot on low all day or high for 4-6 hours. Basically, the entire meal at the top of this post could be made in the crockpot, but you would need 3 of them.
