I love breakfast foods. You know, pancakes, waffles, cinnamon rolls, bacon, eggs, etc. I would be willing to eat breakfast for any meal.
My husband, on the other hand, believes breakfast food should only be served at breakfast time. (This is the same man who eats cold pizza for breakfast even though I detest it.) Out of respect for him, (Wow I sound noble here.
) I only serve breakfast for supper when he isn’t going to be home. However, I still only do so about once a year.
This past Saturday night was the exception to the rule. For some reason I decided that we would have breakfast for supper. I told my husband I would fix him something else, but he totally shocked me and actually ate breakfast food at a meal other than breakfast. I almost fainted. Well, not really, but I was pretty surprised.
I served waffles topped with real maple syrup, scrambled eggs, and bacon (I made Joshua special pancakes.). It was delicious and the children were singing my praises the rest of the evening. OK, so I may be exaggerating a little in this post today. They weren’t really singing, but they were very happy.
I do want to tell you that several years ago I started cooking bacon in the oven. It literally changed my cooking life or at least my bacon cooking life.
To bake bacon, I preheat the oven to 400 degrees. I place the bacon slices on a baking sheet with sides and then bake it for about 25-30 minutes or until it is the desired crispness.
That’s it. No flipping it over or having bacon grease splatter all over the kitchen.
Also, I don’t throw away our bacon grease. I keep it in a jar in the refrigerator to use in cooking throughout the week.
