Smoked Sausage & Zucchini Skillet Meal

Our garden has been producing a lot of zucchini which is wonderful. However, sometimes we can get tired of eating it the same few ways like fried zucchini and zucchini bread. Last week I decided to come up with a main dish recipe using things I had on hand.

The result was a dish that my husband said I can make again. He is not one to just say he likes a meal in order to spare my feelings, so I know it must have been pretty tasty. :) The kids weren’t as excited about it, but I kind of expected that and had another main dish available just in case.

Smoked Sausage & Zucchini Skillet Meal

Ingredients

  • 2 Medium Zucchini
  • 1 Small Onion
  • 1/2 of a Green Pepper
  • 1 Tbsp. Extra Virgin Olive Oil
  • 1 Package Smoked Sausage
  • 2 Cups Tomato Sauce
  • 1 tsp. Oregano
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper

Instructions

  1. Peel, remove the seeds, and dice the 2 zucchini.
  2. Dice the onion and green pepper.
  3. Saute the zucchini, onion, green pepper, and olive oil in a skillet for 5 minutes over medium-high heat.
  4. Cut up the sausage and either slice it into thin "coins" or dice it.
  5. Add the sausage, tomato sauce, oregano, salt, and pepper to the vegetables.
  6. Reduce the heat to low, cover, and simmer for 20+ minutes, stirring occasionally.
  7. Serve when zucchini is tender and sauce is thick.

Notes

This meal can be gluten-free if the smoked sausage has been certified as gluten-free.

    Hi Jackie! 
    This sounds delicious. 
    We’ve had lots of zucchini from the garden this year too. I’ve had to be resourceful. 
    So far I’ve made a zucchini slaw that was soooo good. 
    And my personal favorite was the Baked Zucchini Crumble… tastes just like apple cobbler! yummie. I even made some pie filling out of it and canned it. 

    I’ll have to give this recipe a try. 
    I’m curious about your recipe zip list…is there a place to download this?  
    Can I just pin the recipe?

      Hi, Pat! Thanks for your comment. I am glad to hear about all of the ways you are using zucchini. Did you make the zucchini slaw just like cole slaw? I have never thought of that.
