Our garden has been producing a lot of zucchini which is wonderful. However, sometimes we can get tired of eating it the same few ways like fried zucchini and zucchini bread. Last week I decided to come up with a main dish recipe using things I had on hand.
The result was a dish that my husband said I can make again. He is not one to just say he likes a meal in order to spare my feelings, so I know it must have been pretty tasty.
The kids weren’t as excited about it, but I kind of expected that and had another main dish available just in case.

Ingredients
- 2 Medium Zucchini
- 1 Small Onion
- 1/2 of a Green Pepper
- 1 Tbsp. Extra Virgin Olive Oil
- 1 Package Smoked Sausage
- 2 Cups Tomato Sauce
- 1 tsp. Oregano
- 1/2 tsp. Salt
- 1/4 tsp. Pepper
Instructions
- Peel, remove the seeds, and dice the 2 zucchini.
- Dice the onion and green pepper.
- Saute the zucchini, onion, green pepper, and olive oil in a skillet for 5 minutes over medium-high heat.
- Cut up the sausage and either slice it into thin "coins" or dice it.
- Add the sausage, tomato sauce, oregano, salt, and pepper to the vegetables.
- Reduce the heat to low, cover, and simmer for 20+ minutes, stirring occasionally.
- Serve when zucchini is tender and sauce is thick.
Notes
This meal can be gluten-free if the smoked sausage has been certified as gluten-free.
