Our Family’s Favorite Meals: Sweet & Sour Pork

I have shared before that our family loves pork loin and pork chops. Whenever we have leftovers of either one I like to use the meat to make sweet & sour pork.

I serve the sweet and sour pork over cooked rice and usually serve it with a vegetable like brussels sprouts and fruit. If you would like to see how I make this recipe, check out the link below. This is definitely a yummy way to enjoy leftover pork.

Sweet & Sour Pork

Ingredients

  • 2 Tbsp. Extra Virgin Olive Oil
  • 3 or 4 Cooked Pork Chops
  • ½ of a Green Pepper, chopped
  • ½ of a Onion, chopped
  • 3 Tbsp. Sugar
  • 3 Tbsp. Vinegar
  • 2 Tbsp. Soy Sauce
  • 1/4 tsp. Ginger
  • 1/4 tsp. Garlic Powder
  • 1 cup Crushed Pineapple, drained
  • Reserved Pineapple Juice
  • 1 Tbsp. Cornstarch

Instructions

  1. Cut the cooked pork chops into bite sized pieces (Trim away the fat and bones if necessary).
  2. Heat the oil in a skillet over medium high heat.
  3. Add the chopped onion and green pepper and sauté until tender (approx. 5 mins.).
  4. Add the pork and sugar.
  5. Stir to combine.
  6. In a measuring cup, add reserved pineapple juice and enough water to equal 3/4 cup.
  7. Use a whisk to combine this with the vinegar, soy sauce, cornstarch, ginger, and garlic powder.
  8. Pour this liquid into the skillet after you add the sugar.
  9. Stir and bring to a boil.
  10. Boil for 1 minute.
  11. Remove from heat and add the pineapple.
  12. Serve over cooked rice.

You have my mouth watering again.  I love sweet and sour.  Do your kids eat brussel sprouts?  Mine won’t touch them.  I personally don’t care for them either, but I am sure if they were cooked in a tasty fashion, I probably would.

Thanks, Rachel! 2 of my kids will eat them, but the little ones don’t yet. I will say that bacon grease makes them taste much better than they do without it. :)
